Brown Rice Chocolate Chip Cookies
Ingredients & Mixtures
- 1.5 cups Organic Jasmine Brown Rice Flour (Khaokhunmae Brand)
- 3 tbsp Germinated Rice Germ 6 Species (Khaokhunmae Brand)
- 1/2 cup unsalted butter (softened at room temperature)
- 1/2 cup coconut flower sugar
- 1 egg
- 1/2 cup chocolate chips
- a pinch of salt
Steps & Instructions
- Cream butter and coconut flower sugar until light and fluffy, then beat in the egg until smooth.
- Combine brown rice flour and salt, fold into the creamed butter gently.
- Add germinated rice germ and chocolate chips, fold until evenly distributed.
- Drop rounded tablespoons of cookie dough onto cookie sheets lined with parchment paper.
- Bake at 170°C for 12-15 minutes until edges are golden. Let cool on a wire rack.
