Brown Rice Chocolate Chip Cookies

Ingredients & Mixtures

  • 1.5 cups Organic Jasmine Brown Rice Flour (Khaokhunmae Brand)
  • 3 tbsp Germinated Rice Germ 6 Species (Khaokhunmae Brand)
  • 1/2 cup unsalted butter (softened at room temperature)
  • 1/2 cup coconut flower sugar
  • 1 egg
  • 1/2 cup chocolate chips
  • a pinch of salt

Steps & Instructions

  1. Cream butter and coconut flower sugar until light and fluffy, then beat in the egg until smooth.
  2. Combine brown rice flour and salt, fold into the creamed butter gently.
  3. Add germinated rice germ and chocolate chips, fold until evenly distributed.
  4. Drop rounded tablespoons of cookie dough onto cookie sheets lined with parchment paper.
  5. Bake at 170°C for 12-15 minutes until edges are golden. Let cool on a wire rack.
