Brown Rice Flour Banana Cake

- 1.5 cups Organic Jasmine Brown Rice Flour (Khaokhunmae Brand)
- 3 ripe mashed bananas
- 1/2 cup rice bran oil
- 2 eggs
- 1/2 cup coconut flower sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Steps & Instructions
- Preheat oven to 180°C and prepare banana cake pans.
- In a mixing bowl, beat eggs with coconut flower sugar until dissolved, then add rice bran oil and mashed bananas, mix well.
- Sift jasmine brown rice flour, baking powder, baking soda, and salt into the bowl, fold gently until combined.
- Pour batter into pans and bake for 20-25 minutes, then cool on a wire rack before serving.
