Brown Rice Flour Banana Cake

Ingredients & Mixtures

  • 1.5 cups Organic Jasmine Brown Rice Flour (Khaokhunmae Brand)
  • 3 ripe mashed bananas
  • 1/2 cup rice bran oil
  • 2 eggs
  • 1/2 cup coconut flower sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Steps & Instructions

  1. Preheat oven to 180°C and prepare banana cake pans.
  2. In a mixing bowl, beat eggs with coconut flower sugar until dissolved, then add rice bran oil and mashed bananas, mix well.
  3. Sift jasmine brown rice flour, baking powder, baking soda, and salt into the bowl, fold gently until combined.
  4. Pour batter into pans and bake for 20-25 minutes, then cool on a wire rack before serving.
